Ibo somen

Ibo somen

Somen is a very thin Japanese noodle made of wheat flour and usually served in cold water in the summer months.

Ibo-gun, next to Himeji city is famous for its somen production. Ibo somen is made from the finest-quality flour, crystal-clear water from the Ibo River and salt from Ako. ‘Tenobe (hand-stretched)’ somen are produced by skilled culinary artists after being ripened using a traditional, process.
